Sushi Copenhagen

SushiIn Copenhagen, sushi and sashimi have become very popular in recent years. More and more people are choosing this Japanese delicacy and recognise it as a healthy and tasty choice. However, most places in Copenhagen do not serve traditional sushi. Copenhagen has a lot alternatives when it comes to ordering sushi, but almost all of them serve American or Danish style sushi, which emphasises Maki-zushi. While there is certainly nothing wrong with this, it does not adhere to the traditional Japanese concept. The use of garlic, deep fried shrimp, goat’s cheese, etc. in the roll contradict the most basic principle of traditional sushi: that the taste should be simple and that the meal should be healthy and light.

If one wants to get sushi in Copenhagen, the large majority of the places are run by non-Japanese owners who offer American or Danish style sushi, which as mentioned above, strays from the original concept of highlighting the fresh ingredients.

If one has been to Japan and eaten sushi, one will be able to understand these differences. Another good example is the quality of the tuna fish. “Toro” is the term for the tuna fish\’s fatty section and, in Japan, it is known as the expensive and exclusive part. The look of this fatty piece of tuna is just as appetising as its taste. When consuming it, the tuna seems to dissolve almost on its own due to the fat, and the taste is indescribable and unforgettable.

When one refers to the fish’s “Toro”, one differentiates between “Chu-Toro” and “O-Toro”, where the former has a medium fat concentration and the latter has a high concentration of fat. This can be seen quite clearly in the colour of the tuna, and the fat deposits become clearly visible when there is a lot of fat.

Unfortunately, in Denmark, one cannot get “Toro” because of the tuna fish\’s quality, but one can at times find some fattier parts of the tuna. One can however find a handful of establishments in Denmark that serve traditional sushi. Copenhagen has a few such places, and at our restaurant, we focus on the traditional Japanese preparation. We also try to acquire the fatty tuna in those rare occasions when this is possible.
